Historic Vault

The stone foundation

Our home is a century-old basement, untouched by the frantic pace of the streets above. Raw brick walls and low timber beams hold the cold air, creating the perfect climate for aging wild-fermented wines and resting rare spirits.

We kept the original masonry intact to preserve the quiet, insulated atmosphere. It is a physical refuge where time slows down over a slow-poured glass.

We reject industrial filtering and synthetic chemicals. Every bottle in our cellar is chosen for its raw character, celebrating the unpredictable beauty of low-intervention fermentation and small-batch distillation.
