We rotate our cellar daily. No commercial yeast, no heavy filtration, no synthetic additions. Just pure expressions of soil, grape, and traditional distillation.

Small-Batch
Skin-contact malvasia, unfiltered gamay, and pet-nats from forgotten European slopes. Poured by-the-glass until the bottles run dry.
Alpine herbs, bitter barks, and vintage formulations. Our back-bar houses bottles sourced from small regional monasteries and independent distillers.
Wax-dipped mezcals, single-cask rums, and heirloom grains. Spirits that honor the raw material and the patience of slow wood aging.
